Easy and quick creamy carrot soup!! Perfect for a cold winter's day. Oats give this soup a texture it wouldn't otherwise have. Giving it a creamy flavor without using actual cream. Whip it up in an instant!

1 Lb Carrots peeled and sliced
1/2 Almond Milk
1/4 tsp ground allspice
1/2 tsp ground ginger

Step 1. In a medium sauce pan bring 2 cups of water to boil. Add carrots and oats. cook on high heat. Bring to boil then reduce to medium heat.
Step 2. Continue to cook, stirring frequently, until oats are cooked and carrots are fork-tender, about 5 min.
Step 3. Drain water and transfer to blender. Add milk and blend until smooth and creamy. Add extra milk as needed.
Step 4. Transfer back to saucepan. Over medium heat stir in allspice, ginger. Add salt and pepper to taste.
. Step 10. Garnish with Thyme, add a side of baguette. Serve and Enjoy!!
