An "eggcelent" cookie that's eggless. The perfect Oatmeal cookie. Made with sugar and spice and everything nice. This Recipe will give you a perfect cookie that is not to sweet and packed with flavor.

2-1/4 Cup Oat Flour
2 Tbsp Pure Maple Syrup
1/2 Cup Softened Oat Butter
1/2 Cup Granulated Sugar
1/2 Cup Light Brown Sugar Packed
3 Tbsp Cashew Butter (Or Nut Butter Of Choice (Peanut Butter, Almond Butter)
1/4 Cup Oat Milk
1 Tsp Vanilla
1/4 Tsp Baking Soda
1/2 Tsp Sea Salt
1/2 Tsp Baking Powder
1/4 Tsp Nutmeg
1/2 Tsp Cinnamon
1-1/2 Cups Whole Oats
Stand Mixer/ Hand Mixer (Optional Can Be Mixed By Hand)

Step 1. Preheat oven to 325°.
Step 2. In a large mixing bowl, add softened butter, granulated sugar, and brown sugar. Beat until well combined
Step 3. Next, add maple syrup, oat milk, vanilla and cashew butter. Beat on medium speed until mixture is well combined and light.
Step 4. In a medium mixing bowl combine dry ingredients (Flour, baking soda, baking powder, salt, cinnamon and nutmeg).
Step 5. Slowly incorporate dry ingredient mixture into wet ingredients. Beat on low speed until well combined.
Step 6. Add whole oats and beat on low until just combined.
Step 7. Use cookie scoop to measure out the dough. Place on prepared cookie sheet. Repeat until all dough is used.
Step 8. Gently press down tops of cookies until they are flat.
