Quinoa Burger

I'm OBSESSED!! I made a Quinoa burger thats to die for. An helathy alternative to a staple favorite. Not only healthy, but delicious. This quick and easy recipe you'll be in and out the kitchen in no time. This method is so simple and will have your family and friends raving.


-Prep Time: 20 min

-Cook Time: 15 min

-Total Time : 35 min

 

INGREDIENTS:

  • 1-1/2 Cup Cooked Quinoa

  • 3/4 Cup Cooked Pinto Beans

  • 1/2 Tbsp Avocado Oil

  • 1/4 Cup Diced Onion

  • 1 Tbsp Each, Chili Powder, Cumin Powder, Basil

  • 1/2 Tsp Each, Salt & Black Pepper

  • 1 Tbsp Pure Cane Sugar

  • 4 Tbsp Vegan BBQ Sauce

  • 1/2 Cup Bread Crumbs


Toppings:

  • Just Mayo (Vegan Mayo)

  • Lettuce

  • Tomatoes

  • Vegan Cheese

INSTRUCTIONS:

Step 1. Heat skillet over medium heat. Once hot, add oil and onion. Season with a bit of salt, pepper and thyme. and sauté for 3-4 minutes, or until fragrant, soft and golden brown. Remove and set aside.


Step 2. In a large mixing bowl, add pinto beans and mash well with fork, leaving only a few whole beans. Mix in sugar.

Step 3. Next, add cooked quinoa, sautéed onion, break crumbs, BBQ sauce, and spices. Mix throughly with a wooden spoon until moldable. ( If dry as extra 1-2 Tbsp BBQ sauce. If to wet, add more breadcrumbs.)


Step 4. Divide into 6 patties. Mold patties with hand.


Step 5. Heat skillet over medium heat. Once hot, add enough oil to coat the bottom of skillet, then add your burgers (only as many will comfortably fit).


Step 6. Cook for 3-4 minutes or until well browned on the underside, then gently flip. Keep in mind they aren't as firm as meat burgers, but will hold their shape. Reduce heat if blowing too quickly. Cook for 3-4 minutes on other side.


Step 7. Remove burgers from heat and let cool slightly. Toast buns and prepare toppings.


Step 8. Layer bottom bun, mayo, patty, cheese, lettuce, onions, tomatoes and top bun.
