A cake mixture in which you can actually lick the pan with no worries, kids and adults alike. This recipe is kid friendly and will have you the envy of the town. This delicious, quick and easy recipe will have you in and out of the kitchen in no time and with a busy schedule like mine, that is very important. This mixture tastes just like the boxed cake mix you would buy, but guess what? This is a vegan cake and made from scratch!

-Bake Time: 40-45 min @ 350° F
-Total Time : 45 min
1-2/3 Cups Unbleached Flour
1/2 Tbsp Baking Powder
1/2 Tbsp Apple Cider Vinegar (AVC)
1/4 Tsp Salt
3/4 Cup Granulated Sugar
3/4 Cup Oat Milk
3 Egg Replacer (Follow mixing instructions on package)
4 Tbsp Softened Oat Butter (Or vegan butter of choice)
1-1/2 Tsp Lemon Zest
3/4 Tsp Lemon Extract
1 Tsp Vanilla Extract
9" x 5" Loaf Pan

Step 1. Preheat oven @ 350° F
Step 2. In a small bowl add milk and ACV. Let sit.
Step 3. In a large mixing bowl add butter, sugar, salt, egg replacer, and lemon zest, mix well.
Step 4. Next, add milk and ACV mixture, lemon extract and vanilla. Mix until well combined.
Step 5. Next, Sift in flour and add baking powder. Mix until all ingredients are well incorporated.
Step 6. After the batter is completely mixed through, grease loaf pan.
Step 7. Pour batter into loaf pan and place in oven. Bake for 40-45 minutes, until the top is golden brown, until a toothpick inserted comes out clean
Step 8. Let cool on wire rack for 20 minutes, then Serve and Enjoy!!
